Ingredients: 1 1/2 cups Gluten-Free Flour Blend, 1 tsp baking soda, 1 tsp ground cinnamon, 1/2 tsp ground nutmeg, 1/2 tsp salt, 2 eggs, 1 ripe banana(mashed), 1/3 cup olive oil(can use avocado as well or if you prefer canola), 1/4 cup brown sugar, 1 carrot or zucchini(shredded), 1 small apple(cored and diced), 1/2 cup raisins or cranberries, 1/4 cup of chopped walnuts(optional).
What to do: 1) Preheat your oven to 375 degrees F 2) Line your muffin tin with liners 3) In a large bowl, mix the flour, baking soda, cinnamon, nutmeg and salt. 4) In a medium bowl, whisk the eggs, banana, oil and brown sugar together. Stir the egg mixture into the flour mixture until combined. 5) Fold in the carrots or zucchini, apple, raisins or cranberries and walnuts if using. 6) Divide the batter in the muffin tin and bake for 15-18 minutes or until they are golden brown and puffy. 7) Cool for 5 minutes before removing from the muffin tin and enjoy!
